But the the process of steaming and heating green tea stops this oxidation process earlier than with black tea, which goes through additional processing that destroys some of the flavonoids (<a class="zem_slink freebase/guid/9202a8c04000641f80000000001fd04f" title="Polyphenol" rel="wikipedia" href="http://en.wikipedia.org/wiki/Polyphenol">polyphenols</a>) unique to tea such as thearubigins, epicatechins, catechins and other <a class="zem_slink freebase/guid/9202a8c04000641f80000000000093f6" title="Antioxidant" rel="wikipedia" href="http://en.wikipedia.org/wiki/Antioxidant">antioxidants</a>, and causes leaves to turn dark brown or even red.</p>
