There are times in your low carb cooking when you can use only one of the low carb vegetables to give you a fantastic dish that looks mouth-watering. This type of low carb recipe will call for only a low carb vegetable like an eggplant. This vegetable is very versatile and you can use it in many ways. But almost any vegetable will do.

If you only have one vegetable, garnish it with some of the other ingredients we have mentioned to spice it up a bit. A small bit of carbohydrate like a piece of bread or small serving of noodles, wont’ kill you, but fruit or yogurt and even high quality organic lean meat may be better.
